Hey guys,

Welcome to my blog!

I almost can’t believe I’m sat here writing my first blogpost EVER, that is how excited I am.

As a lot of people who know me probably know, one of the things I love is food. And when I say that I love it, I mean LOOOOOVE. And one of my favourite meals of the day is breakfast. I honestly don’t think I have ever skipped breakfast in my entire life.

So that is why I am writing this post about a few of my favourite breakfasts. I’ve tried to incorporate some sweet, as well as some savoury options so that there is (hopefully) something for everyone to like. I hope it might give you some inspiration and that you try them out. Because let me tell you: they are YUMMY!

Yoghurt and fruit bowl

Even though this breakfast is actually really simple, I only recently discovered it. It’s so quick and easy, but at the same time sooo yummy. I especially like to make this when the weather is nice or if I’m in the mood for nice weather (mostly it isn’t, because the weather in Holland is just crappy most of the time), because it’s so fresh and fruity. It really puts me in a summery mood :).

You will need:

  • Yoghurt (any kind that you like, I used low-fat)

  • Fruits of your choice (in my case strawberrys, grapes and raspberry’s, but any fruit combo will work)

  • Honey, optional

Okay, now let’s make it. All you have to do is choose your favourite fruits, wash them, cut them up and put them in a bowl along with some yoghurt (I usually just poor this over the fruit, but for the sake of this picture I didn’t). Lastly you can drizzle some honey on top if you like.

Even though I never really go by the same ingredients to make my smoothies, I just had to incorporate this, because I love them just SO much! Because you can make smoothies in so many different ways, feel free to experiment with different ingredients. I'm pretty sure it will turn out delicious, no matter what.

You will need:

  • Fresh and/or frozen fruit of your choice (I used raspberries, blueberries, a banana and frozen strawberry's)

  • Any kind of liquid (I used almond milk)

  • Sweetener, optional

To assemble your smoothie you basically chuck everything into a blender, blend it up and poor it into a glass. And then you're ready to tuck in! I hope you will like it as much as I do!

Tip: To make you're smoothie a little bit thicker and creamier you could try adding banana, frozen fruit or yoghurt.

Cottage cheese and cucumber crackers

I’ve been eating this one for quite some time now, but it’s still one that I come back to a lot. It’s just so easy and refreshing, I LOVE it!

You will need:

  • Crackers (I always like to use crispbread)

  • Cottage cheese

  • Cucumber

To make it you just spread some of the cottage cheese onto your crackers and pop on a few slices of cucumber. And that’s it, super easy right? Perfect for when you’re in a rush.

Avocado toast

This breakfast might actually be even easier and quicker than the last one, but that doesn’t make it less yummy!

You will need:

  • Toast or crackers (I used crispbread again)

  • Avocado

  • Salt and pepper

To assemble your little breakfast, you just slice or mash up your avocado and put it on your toast or crackers, along with a pinch of salt and pepper. And you're ready to enjoy!

Lots of love, Esther
